What I'm Loving for Breakfast These Days
/I am a breakfast girl, always have been, always will be. I could eat breakfast for well, breakfast, lunch AND dinner and I'd be a happy girl. However, I usually try to have a more diverse diet than that. As most of us know, breakfast is the most important meal of the day. If you think about it, your body has been fasting all night long (as in break-fast) and having something first thing in the morning is a great way to recharge your batteries so to speak.
Eating breakfast helps refuel the blood glucose or blood sugar levels which is essential for brain and body energy and it has also been shown to help with weight loss and weight management, as long as you are eating the right things meaning, not a big plate of bacon, eggs, and greasy hash browns.
I rotate my breakfast options which keeps things interesting for my brain and my body. I'm LOVING my breakfast these days and I wanted to share with you what I am eating and why it is SO good for you.
Introducing to you...Avocado Toast!
This is such a great start to my day because of several reasons. I love avocados and I typically eat a whole avocado a day. Avos are a great source of healthy fats, folate, vitamin E and it has been shown that eating avocado with certain foods helps the body absorb more nutrients from those foods such a carotenoids.
Avocados are pretty much one of the best foods ever.
To make Avocado Toast is pretty simple. You will need the following:
+ Two pieces of bread, preferably Whole Grain or Gluten-Free. Try to stay away from the white stuff
+ Half a ripe avocado
+ Sea salt and fresh ground pepper
How to Make:
1. Toast both pieces of bread
2. Smear 1/4 of your avocado on each piece of bread (you will use 1/2 of an avocado depending on the size)
3. Sprinkle each piece with a little good quality sea salt and fresh ground pepper.
4. Enjoy. This is seriously delicious!
I usually follow this up with a fresh green juice of organic kale,organic romaine,organic celery, organic cucumber and 1/2 an organic apple.
++ The gluten-free bread I use is Food for Life Brown Rice Bread which is yeast free, gluten-free, wheat free, corn free, soy free but OH SO NOT taste free!
