Carrot Cake Power Balls
/I have this deep love of anything carrot cake which is interesting because I actually don't like cake! Never have, not even as a kid. I know, what kid doesn't like cake? However, put an ice-cream cake in front of me and I was all over it! Every birthday my mom would go to Baskin Robbins and order me whatever flavor was my favorite that year, mint chocolate chip, vanilla, neapolitan (I think I'm the only person I know that liked this flavor) and even bubble gum!
Now I can't even imagine eating that stuff unless it's coconut ice cream with a little vegan magic shell (I'll post this another time) but I love the flavor of carrot cake. I've made carrot cake pancakes, carrot cake muffins, and now these carrot cake power balls.
I am someone who always needs to carry food with me because I don't like to let myself get hungry. When I do and don't have food with me I have a tendency to grab the nearest thing I can find, healthy or not. So, a long time ago I started carrying foods in my purse. Apples, bars, sandwiches, you name it. Sometimes I feel like a walking super market ;)
So naturally, when the whole power/bliss ball craze came about I soon realized these would be a great option to carry with me when I know I'm going to be on the road all day. All you have to do is make a quick Pinterest search for bliss balls to see that your flavor options are not lacking. These however, are my personal favorite.
Carrot Cake Power Balls
What you'll need -1 cup chopped cashews1/2 cup chopped pecans1 scoop of vanilla protein powder (I use Arbonne Vanilla) 4 dates 1 tbsp. Lucuma Powder1 cup gluten free oats1/8 tsp. grounded ginger1/2 tsp. cinnamon1/4 tsp. ground cloves1/4 tsp. ground nutmeg2 carrots (shredded)
How to Make -
1. In a food processor, add cashews, oats , dates and pecans and pulse for about 30 seconds. You want the mix to be able to stick together but not powdery. 2. Transfer to a bowl and add the vanilla protein powder, Lucuma powder, ginger, cinnamon, cloves, nutmeg and carrots and mix well. 3. If the mixture isn't sticking slowly add some water, 1 tbsp at a time until you can form 1 1/2 inch balls and they will stick together. 4. Use all the mixture to roll out 1 1/2 inch balls, placing them on a baking sheet lined with parchment paper. 5. Last, roll the balls in unsweetened coconut and place back on the baking sheet to dry out a bit. 6. Store in an airtight container, in the fridge for up to 5 - 7 days. 7. Enjoy!
